Veggie-licious Supper

I have tried roasting vegetables in countless ways, only to pull them out looking burned, mushy, and limp…I had taken the advise to put some olive oil on them, before popping them in the over. Only after having a smoke filled oven and finally throwing my hands up in the air saying, “I’ll never use you again, Olive Oil!”, did I finally find a way that works for me and my family.

Fist of all, olive oil has a pretty low smoke point of 325ºF – 375ºF  – with roasting suggestions set between 375ºF and 425ºF, it’s of no wonder why my vegetables never turned out. If oil gets heated above its smoke point, not only will your food taste bad but it will actually be bad for you. The reason being, when oil gets heated beyond its smoke point, it starts to break down chemically. It loses most of its antioxidants, releases toxic chemicals (in the form of smoke), and becomes filled with carcinogenic free radicals. So if you’re roasting your veggies in an oven heated to 400ºF or higher, DON’T use olive oil. We stopped using oil all together.

Instead we do the following:

  • Pre-heat over to 400ºF
  • Chop up the veggies and lay them out on a cooking sheet
  • Squeeze one LIME over all the veggies
  • Sprinkle on some of our favorite seasonings
  • Mix, pop in the oven for 20 minutes and serve

It’s that easy. I promise you’ll love this super easy and delicious new way of roasting your veggies. And don’t be afraid to play with seasonings, or the amount of lime you put on your dish! It’s all about what is appealing to you and your family – just be sure you’re getting LOADS of vegetables during supper, and don’t use too much table salt. In fact, if you’re using salt at all, I highly recommend Himalayan Pink Salt. Himalayan salt happens to be 85% sodium chloride,  and the remainder contains over 80+ minerals. These minerals can help your body balance your PH, regulate water content, remove toxins, help absorb nutrients, prevent muscle cramping, create balance and more. . . but that’s a post for a different day!
